India is now the fifth largest coffee producer in the world, and this monsoon Malabar has grown in popularity over recent years. It is grown in the Kerala district on India’s tropical Malabar Coast. After harvesting the raw coffee beans, they are stored in open-sided storehouses where they are exposed to the Monsoon conditions during May and June. The high humidity causes the beans to swell with the moisture, and then the beans are dried, and this particular process results in its unique character.
